This is so easy, exact ingredients doesn't matter at all with this, just throw in whatever you have!
Makes 6 servings
(Ideal slow cooker size: 6 quart)
2 -15oz. cans corn, drained (I have only ever used one)
15-oz. can black beans, rinsed and drained
16-oz. jar chunky salsa, divided
6 boneless, skinless chicken breast halves
1 cup low-fat shredded cheddar cheese
1. Combine corn, black beans, and 1/2 cup salsa in slow cooker
2. Top with chicken. Pour remaining salsa over chicken.
3. Cover. Cook on high 3-4 hours or low 7-8 hours.
4. Sprinkle with cheese. Cover 5 minutes for cheese to melt.
Note: I always add in a can of stewed tomatoes and a little less salsa, just because I like tomatoes. This dish goes well with rice.
Per Serving: 370 calories, 6g total fat.
