How to make freezer jams:
1. combine prepared fruit with lemon juice (if listed) in a 6-8 quart saucepot.
2. Add sugar, mixing thoroughly. Let stand 10 minutes
3. Combine 3/4 cup water and fruit jell pectin in a small saucepan. Bring mixture to a full rolling boil. Boil hard 1 minute stirring constantly.
4. Add cooked pectin to fruit mixture. Stir for 3 minutes.
5. Ladle freezer jam into frezzer jars, leaving 1/2 inch headspace. Adjust caps and let jam stand until set, but no longer than 24 hours. Serve immediately, refrigerate up to 3 weeks or freeze up to 1 year.
Strawberry:
Yeild: 5 - 8oz jars
Preparation of fruit: remove caps. crush one layer at a time.

2 cups crushed berries (1qt.)
2 Tbsp. lemon juice
4 cups sugar
3/4 cup water
