Zucchini Bread

Prep: 15 min Bake: 55 min

when the markets are brimming with zucchini, look for the small ones- they’re young and their skins are more tender

1 ½ C. flour
1 tsp. ground cinnamon
½ tsp. soda
¼ tsp. baking powder
½ tsp. salt

½ tsp. ground nutmeg
1 C. sugar
1 C. finely shredded, unpeeled zucchini
¼ C. cooking oil
1 egg
½ C. chopped walnuts or pecans(optional)

1. grease pan
2. combine: flour, cinnamon, soda, baking powder, salt, nutmeg
3. in another bowl mix well: sugar, zucchini, oil, eggs, lemon
4. add dry mixture and stir just until moistened
Spoon batter into pan, bake at 350 degrees for 55-60 min or until toothpick comes out clean. Cool in pan for 10 min. Wrap and store overnight.
