NO EGG PUMPKIN BREAD LOAVES

5 c. flour
4 c. sugar
1 c. oil
3 c. pumpkin
1 c. dates or raisins
1 c. chopped nuts
1 tsp. salt
1 tsp. cinnamon
1 tsp. cloves
4 tsp. baking soda

Reserving 1/2 cup flour, put all ingredients except dates and nuts in large mixing bowl and mix at low speed. Coat dates and nuts with flour and add to cake. Pour into 2 large or 3 medium greased loaf pans and bake in 350 degree oven for 70 minutes.

Pumpkin Cake

1 pkg yellow cake mix (take out 1 cup)
1 egg
1 cube butter

mix and press into a 9x13 pan

1 Large can pumpkin
2 eggs
2/3 C. can milk
1/2 C. sugar
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. cloves

Mix and pour into pan

Topping
1/2 C. sugar
3 Tbsp melted butter
1 tsp cinnamon
1 C. cake mix

mix together and sprinkle on top

Bake 350 degrees for 40-50 minutes

Pumpkin Cobbler

1 15oz can pumpkin
1 12oz can evaporated milk
3 eggs
1 C. sugar
4 tsp. pumpkin pie spice
Substitute for:(2 tsp cinnamon, 1 tsp ginger, 1 tsp nutmeg, 1/2 tsp cloves)

Mix all together, poor into 9x13 pan

Sprinkle yellow cake mix on top, and cut up 1/2 C. butter to add on top.

Bake 1 hr. at 350 degrees

Goes great with: whipping cream or vanilla ice cream!

Pumpkin Chocolate Chip Cookies


INGREDIENTS

  • 1 c. canned pumpkin
  • 1 c. white sugar
  • 1/2 c. vegetable oil
  • 1 egg
  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 2 tp. ground cinnamon
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. milk
  • 1 tsp. vanilla extract
  • 2 c. semisweet chocolate chips
  • 1/2 c. chopped walnuts (optional)
DIRECTIONS
  1. Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
  2. Add vanilla, chocolate chips and nuts.
  3. Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.
